Vegan Stewed Okra and Tomatoes

Serves 4

1 16 oz. pkg frozen chopped Okra
1/4 cup water
1 14 oz. can tomato sauce
4 tomatoes, chopped, seeds removed
1 medium onion, chopped
6 cloves garlic, minced or chopped fine
1 tsp dried thyme
1 tsp paprika
Pinch cayenne pepper
Salt and pepper to taste

Heat water in large pan over medium-high heat. Add onions and cook until soft, stirring occasionally. Add seasonings, tomatos, tomato sauce, and okra. Cover and continue to cook appr. 30 minutes.  Season to taste and serve over rice, quinoa, or mashed potatoes.
