Vegan Feta

1 ½ cups almond flour/meal
2 cloves of fresh garlic
¼ cup fresh lemon juice
¼ cup water
3 Tbsp olive oil
½ tsp salt

Directions: Preheat the oven to 350 degrees. Turn on the food processor with the S blade running. Drop in the garlic cloves. Add almond flour, lemon juice, water, salt and olive oil. Blend until a thick paste is formed, scraping down the sides of the work bowl as needed. Drop the mixture onto a lightly greased sheet of plastic wrap. Use the plastic wrap to mold/form the mixture into a disc-type rounded mound. Remove the plastic wrap and flip the mound onto a sheet of parchment paper which has been placed on a cookie sheet smooth side up. Bake for 30 minutes or until light cracking or browning occurs. Remove from oven, cool and crumble.
