Sweet and Sour Pineapple Sauce

Add this sauce to your choice of protein, vegetables and/or rice to bring a delicious layer of flavor to your meal.

1/2 cup packed brown sugar
1/2 cup rice vinegar or red wine vinegar (or
      vinegar of choice)
1/3 cup ketchup
1 8 oz can pineapple chunks or rings in juice
   (use juice)
1 1/2 Tbsp cornstarch
1 Tbsp tamari or Bragg liquid aminos
1/4 tsp ground ginger and garlic powder
      (or use fresh)
1 green onion, sliced (for garnish, optional)
2 Tbsp roasted peanuts (for garnish, optional)

Directions: In a medium/small pot add all the sauce ingredients using preferred method for corn starch. The pineapple chunks, or cut up rings along with ALL the juice can go right into the pan or added towards the end. Once the corn starch is in the pot, you will need to set the heat higher and stir frequently. Have your meal ready to assemble before you get to the final step of thickening the sauce.

*Tip to prevent corn starch clumping:
#1 - To thicken a sauce with corn starch, you can make a slurry, which is equal parts cornstarch and liquid. After you’ve created your slurry, slowly add it to your sauce and let it cook through.
#2 - If you don’t want to add any more liquid to your sauce, use a small fine mesh sieve to separate the corn starch powder into the sauce. By about a teaspoon, slowly sift the cornstarch through the sieve. It won’t clump, and you won’t have to add any more liquid (as you would with a slurry).
