Don’t let the simplicity of these ingredients fool you. This dough is yummy and a healthy way to snack.
1 cup raw cashews
1/2 cup rolled oats
1/2 cup pure maple syrup
2 tsp vanilla
cacoa nibs, carob or chocolate chips (optional)
1 tsp sea salt or to taste
Blend or process the cashews and oats for a few minutes until fine. Add in maple syrup, vanilla and salt. Once the mixture is as creamy as it can get, add in nibs or chips if using. The mixture will be quite sticky. Freeze for 30 mnutes before rolling into balls, or put in small containers to pull out a sweet snack as needed from fridge or freezer.
