Quickie Quesadillas

(Serves 2-4)

8 corn tortillas
1/2 cup roasted red pepper hummus (can use any variety), store bought or homemade
1/2 cup salsa of choice, store bought or homemade
2 green onions, trimmed and sliced using all of green part as well as white

Set a medium non-stick skillet to medium high heat. Spread a couple tablespoons of hummus and salsa on a tortilla, add green onions, top with a second tortilla and gently place in the pan. Cover and cook about 5 minutes before carefully flipping over to brown, warm the other side. Continue to cook, let them cool a bit before eating.
