Perfect Tofu Stir Fry

1 14 oz. pkg. firm or extra firm water packed tofu
1 frozen pkg. veggie mix of choice plus any other veggies you have or want
1/4 cup tamari/soy sauce
2 Tbsp brown sugar
1 Tbsp fresh ginger, grated
1 Tbsp pure maple syrup or agave
1 Tbsp cornstarch
Cooked rice or quinoa optional

Preheat oven to 400. Drain tofu from package and place it on a plate with towels underneath and on top of it. Place another plate on top and add something heavy like a book or small hand weight on top. Let tofu dry out a bit, turning over towels to absorb more water. Once towels are wet, chop tofu into cubes. Arrange on parchment-lined baking sheet and bake for appr. 30 minutes. Start rice if you will be serving over rice. In a small glass jar, add tamari, ginger, brown sugar, maple syrup or agave and corn starch. Shake well. Stir fry veggies using a bit of water over medium/high heat. Cook and stir starting with onions if using and moving to the frozen veggies last. Cook the mixture with the sauce for about 5 minutes, stirring often as it will bubble and thicken. Stir in tofu last and serve over rice or quinoa.
