• Oil-Free Italian Dressing

    1/2 cup red wine vinegar
    1 cup water or veggie broth
    4 green onions or 1/4 sweet vidalia onion
    4 big green olives (stuffed with pimento or not) OR 1/4 cup capers
    1/8 cup ketchup
    2 tsp. dijon mustard
    2 tsp. golden flax seed, ground (in coffee grinder- keep in freezer)
    1 tsp. Italian seasoning blend of choice

    Directions: Blend all ingredients. If using capers, add 1-2 more tsp. ground flax seed. Store up to one week in fridge. GF, V
