Use this frosting on cake slices, for fruit dip, on
oatmeal, toast, etc…you will need a powerful
blender to emulsify cashews and dates.
1 cup cashews, soaked overnight, rinsed and
1 cup medjool dates, pitted and soaked
overnight (save soaking water)
1/4+ cup date water as needed for desired
1 tsp cinnamon
1/8 cup pure maple syrup
1/4+ cup almond or coconut milk
1/2 tsp cardamom (optional)
1/2 tsp salt
Combine all ingredients in a powerful blender, adding liquids slowly as needed to reach desired consistency. You may wish to spread this frosting on individual cake slices as the moisture level may be too high to frost the entire cake with depending on varying results of dates, blenders and level of date water used, etc.
