Mini Baked Falafel

Makes about 2 dozen patties
1 clove garlic
1 15oz can garbanzo beans (chickpeas), rinsed and drained
1/4 cup parsley, minced
1/4 cup cilantro, minced
1/4 cup oat flour, or flour of choice*
1 Tbsp ground flax seed
3 Tbsp water
2 green onions, trimmed (all parts)
2 tsp cumin
1 tsp kosher salt or 1/4 tsp regular salt
1 tsp baking powder

Directions: Preheat greased baking pan in 425 degree oven. Mix flax and water in a small bowl, stir and set aside. Drop garlic into running  food processor to thoroughly process. Turn off food processor and add all the remaining ingredients. Mix until well combined. Using a melon baller, form mixture into balls and flatten with the
back of a fork to form a pattie. Place on preheated baking pan and bake for 7 minutes. Flip patties and bake another 7 minutes. Serve with hummus, tabbouleh and pita or refrigerate or freeze after cooling.
