Lentil and Collard Green Stew

4 cups water
2 vegan bouillon cubes
1 onion, chopped
3 large garlic cloves, chopped
4-6 celery stalks, sliced
4-6 carrots, scrubbed and sliced
4-6 parsnips, scrubbed and sliced (add parsley if attached!)
1 14 oz can diced tomatoes
1 cup green, brown, red or black lentils
1 bunch collard greens, washed and chopped
1 Tbsp Italian seasoning
2 Tbsp Mrs. Dash® Garlic & Herb Seasoning blend
Salt and pepper to taste


Directions: Put all ingredients in a big pot, bring to a light boil and then turn down and simmer until cooked through. Add seasoning to taste. Freeze leftovers. Serve plain or over brown rice or noodles.
