Lemon Jewels with Strawberry Hearts

For your loved ones!

1 cup medjool dates, pits removed with your hands (very easy) appr. 10 whole dates
1 cup walnuts
2 tsp lemon zest
1/4 cup lemon juice
2 Tbsp flax seed, ground (light color please)
3/4 cup Bob’s Red Mill macaroon coconut or coconut flakes of choice
1/2 cup strawberries, sliced and further cut to make little hearts

If dates are not soft, may be best to soak them in warm water for 10 minutes prior to removing pits. Zest lemon then cut in half and squeeze juice to measure. To a food processor with the S blade, add dates, walnuts, lemon zest, ground flax and lemon juice. Process until well combined paste forms. Scoop/roll into little balls, then roll in coconut to cover. Flatten slightly to place your cut strawberry designs on top. Serve with Love.
