Herb Pesto

Makes 2 cups

1/2 cup frozen peas, defrosted
1/2 cup cilantro
1/2 cup flat leaf parsley        
1/2 cup nutritional yeast    
1/2 cup walnuts       
1 tsp salt                                  
3 Tbsp lemon plus lemon zest (optional)
1/4 cup vegetable broth                 
1 clove garlic  
Fresh black pepper to taste

Drop garlic into a blender or food processor first. Zest lemon if desired or cut tiny parts of yellow skin off lemon. Add everything else to the blender or food processor and blend well to combine. Serve with crackers, on potatoes, rice, pasta or veggies.   Freezes well!
