Greg’s Kale Salad

1 bunch curly kale, rinsed well, de-stemmed and torn into small pieces
1 cucumber, peeled and cut into large chunks
1 ripe avocado
1 small bunch green onions, trimmed
1 small bunch cilantro
2 cans mandarin oranges, drained

Place torn or cut pieces of kale into a large mixing bowl. Using a blender, blend avocado, cucumber, green onions (6-8), cilantro, and 1 can (1/2) of the drained mandarin oranges. Pour blended dressing over kale and mix well. Add freshly ground salt and pepper to taste and the remainder of the mandarin oranges. Serve or store in the refrigerator for up to 7 days.
