Ginger Noodles (PCRM.org)

1 8 oz. pkg. soba noodles (find in Asian aisle)
3 Tbsp seasoned rice vinegar
3 Tbsp low-sodium soy sauce, or tamari 
2 tsp ginger, minced
2 garlic cloves, minced
1 jalapeño pepper, diced small
2 green onions, sliced or diced (include white and green parts)
1/4 cup chopped cilantro (or use Italian leaf parsley if preferred)

Cook noddles in boiling water according to package directions.
When tender, drain and rinse. Mix vinegar, soy sauce, ginger, garlic,
jalapeño pepper, green onions, and cilantro, if using, then pour over 
cooked noddles and toss to mix.
