Garlic Mashed Potatoes

3 lbs potatoes, yukon gold, russet, etc.
2-4 cloves garlic, trimmed and chopped
3/4 cup - 1 1/4 cup unsweetened milk of choice
Salt and pepper to taste

Peel and chop potatoes into chunks, put the potatoes in a large pot or pan and cover with enough water just to cover potatoes. Add garlic chunks. Bring to a boil, reduce heat and simmer until fork tender, about 15 minutes. Drain. Mash in pan using electric beaters or a hand masher. (Don’t use a food processor or the potatoes will be a gummy mess). Add milk slowly to the consistency you desire. Season and add additional herbs, green onions, etc.
