Eggless Salad Sandwich

The filling in these sandwiches has the flavor and appearance of egg salad without the saturated fat and cholesterol. It is also quicker and easier to prepare.
1 pkg (or 1 lb) firm reduced fat silken tofu
2 green onions, minced                                                 
2 celery stalks, diced
2 Tbsp dill relish                                                            
2 Tbsp sweet relish (optional)
2 tsp yellow mustard                                                                       
4-6 Tbsp Veganaise, nayonaise or other mayo
¼ tsp turmeric                                                                                 
¼ tsp garlic powder                                                      
1 tsp salt

Directions: Mash the tofu with a fork or potato masher, leaving some chunks. Stir in the other ingredients and enjoy adding sliced tomato and lettuce to your sandwich. Will keep in covered container for up to 4 days.
