Easy Veggie Burgers

1 ½ cups or 1 can black beans, rinsed and drained

1 cup pre-cooked & cooled brown rice

1 cup raw walnuts, chopped (or sub bread crumbs)

1/3 cup panko or other type bread crumbs (see Asian aisle if not finding)

¾ Tbsp BBQ sauce of choice

2 Tbsp minced onion flakes

1 Tbsp each: chili powder, cumin powder, smoked paprika & sugar of choice

½ tsp salt and pepper or to taste


You can easily cook brown rice in the oven. Place 1 cup rice to 2 cups water in a covered casserole dish in a pre-heated 350 degree oven. Set timer for 60 minutes. Fluff with fork or cook a few longer if needed. Chill the rice first for using in this recipe.


In a medium skillet add raw walnuts and toast for 5-7 minutes until fragrant. (You can also do that in the oven on a cookie sheet). Just cook nuts to fragrant/golden brown. Cool. You can also skip this step.


In a large mixing bowl or food processor, mash by hand or pulse all ingredients. Leave some chunks of beans if using a processor. You want a moldable dough. If too wet, add more breadcrumbs. If too dry, add more BBQ sauce or a little ketchup. Taste to adjust seasonings.


Form patties to @3/4 inch thick. Grill or pan fry using as little oil as possible. Enjoy.
