Creamy Lemon Horseradish Dressing

3/4 cup aguafaba (drained liquid from cooked chickpeas)
1/2 cup soaked cashews
1-2 tsp lemon zest
3-4 Tbsp lemon juice
3 Tbsp fresh Italian flat leaf parsley
1-2” piece fresh horseradish, peeled and grated (or Tbsp jarred horseradish)
1 small clove garlic
Salt and Pepper to taste

Soak the cashews 8 hours to overnight depending on time and your blender gusto (1 hour will do with a VitaMix blender). Aquafaba (vegan wonder ingredient with it’s own website!) is simply the thick cooking liquid you can get by draining a can of chickpeas (a.k.a. garbanzo beans). Zest lemon before juicing it. Fresh horseradish can be found in many produce sections. Start with less and add more to taste. Blend all ingredients well. Adjust seasonings. Store in fridge up to 1 1/2 weeks.
