Chocolate Bonbons

(Recipe modified from an excellent website! Makes about 20 bonbons)

1/2 cup brown rice syrup
1/2 cup natural almond or peanut butter
3 Tbsp unsweetened cocoa or carob powder (or combination of both)
2 tsp vanilla extract
3 cups puffed or crisped brown rice

Place syrup, nut butter, cocoa or carob powder in a medium saucepan. Warm over low heat until melted and well combined. Remove from heat and stir in vanilla. Using a sturdy wooden spoon, stir in crushed rice cakes or rice cereal until thoroughly incorporated. Let cool until mixture can be handled easily. Roll between your hands into small balls. (Use your melon baller if you have one.) Place each ball as it is formed on a sheet of wax or parchment paper. Store cooled balls in an airtight container at room temperature for 2-5 days or refrigerate for up to 2 weeks.
