Chickpea Salad with Orange Miso Dressing

 

12 cherry tomatoes, halved
4 green onions, sliced
1 cup cooked quinoa
1 1/2 cup garbanzo beans (chickpeas)
3 Tbsp fresh cilantro, chopped

Dressing:
1/4 cup fresh orange juice (juice of 2 oranges)
1/4 cup seasoned rice vinegar
2 tsp white or yellow miso
1 Tbsp maple syrup or agave nectar
1 clove garlic, minced
1 tsp ginger, grated or minced
2 tsp black or white sesame seeds (optional)

Mix the salad ingredients together. Whisk the dressing ingredients together.
Combine, stir and serve. 10 samples
