First Make the Easy Cheeesy Sauce and have it on hand for MULTITUDE of purposes!
3 medium potatoes, peeled and cubed
4 carrots, peeled and chopped
1/2 cup nutritional yeast (nooch)
1 cup PLUS cooking liquid, water or broth
1 Tbsp lemon juice
1 1/2 tsp salt
1 tsp onion powder
1/2 tsp garlic powder
1 Tbsp ume plum vinegar, optional
Cook carrots and potatoes (starting with carrots which take longer) appr. 25 minutes total until very tender. Save cooking water. Scoop veggies into a high speed blender or food processor. Add in cooking water by 1/2 cup to smooth, creamy sauce. May take several minutes and times to add water. Add nooch, lemon juice and seasonings last and blend to combine. Serve and store leftovers up to 2 weeks in fridge. Reheat or use as a spread. For time saving, use pre-shredded carrots and plain frozen hash browns.
