Cashew Tomato Dill Sauce

1 cup cashews soaked in 1 cup of water
8 grape or cherry tomatoes
1 lemon, juiced
1 garlic clove
2 Tbsp dill, chopped
Salt and pepper to taste

Directions: In a blender or food processor, while blade is running, drop in garlic. Add cashews with soaking water, lemon juice and tomatoes. Blend well. Stir in dill, add salt and pepper to taste. Glute Free / Vegan
