Cabbage, Corn and Lima Bean Surprise

1⁄4 cup vegetable broth
1⁄2 Tbsp Bragg’s liquid aminos or soy sauce
2 1⁄2 cups frozen lima beans (16 ounce bag)
2 1⁄2 cups shredded cabbage
3 tsp lemon dill seasoning mix or Mrs. Dash type-
   blend of choice
1 tsp Sambal Oelek, other chili sauce or hot sauce,
1 1⁄2 cups frozen corn, thawed slightly under running
   warm water
2 1⁄2 to 3 cups pre-cooked brown rice
1 large tomato, chopped
Top with Sriracha hot sauce and salt and pepper to taste.

Directions: Place broth, soy sauce, lima beans and shredded cabbage in a large non-stick sauté pan and cook for 2 minutes, stirring frequently.  Add the seasoning mixture of your choice and Sambal Oelek.  Continue to cook for another 3 minutes. Add corn and cook, stirring occasionally for another 2 minutes.  Add rice and continue to cook and stir until rice is heated through and all vegetables are tender. Stir in tomato.  Serve at once. Also good rolled in a soft corn tortilla. GF, V
