Blueberry Muffins

Makes 1 dozen

1/2 cup aquafaba
2 Tbsp golden flax seed, ground

1/2 cup non-dairy vanilla creamer (almond, coconut, etc)
1/2 cup soft pitted medjool dates (soak to soften if needed)
1 banana
2 Tbsp maple syrup
1 Tbsp vanilla
2 tsp lemon zest
2 tsp lemon juice

1 1/2 cups white/wheat flour of choice
1 tsp baking soda
1/4 tsp salt

1 cup blueberries
Cinnamon sugar for topping (optional)

Process or blend the date/banana mixture until smooth. Add the flax mixture and blend well again. Spatula scrape into a large mixing bowl. Stir in the flour mixture and stir until just combined. Add blueberries and carefully mix those in. Fill prepared muffin pan. Sprinkle each muffin mix with cinnamon sugar and bake 375 @ 15 minutes.
