Black Bean Pasta Ole
Great way to use leftover marinara or salsa.
1 lb pasta noodles of choice
1 1/2 cups marinara sauce of choice
1 1/2 cups salsa of choice
1 14 oz can black beans
1 1/2 cup frozen corn, thawed
1 1/2 cup frozen peas, thawed
Boil water, add pasta, or use cold method which is adding pasta to pot with cold water and cook until tender (no sticking and less time). During the last minute of cooking, add corn, peas and beans. Drain. Add sauces, stir gently and serve. Optional ingredients are endless. Cilantro, olives, etc.
