3/4 cup earth balance butter (sticks)
1/2 cup organic cane sugar
2 cups organic flour of choice
1 tsp vanilla
1/4 tsp salt
1 cup vegan cream cheese (3 0z)
1/4 cup earth balance butter (sticks)
3/4 cup brown sugar, packed
1 cup chopped nuts or coconut (your choice)
Beat together the first 5 ingredients until fine crumbs form. Reserve one cup of mixture and set aside. Press remainder into a lined or prepared 13 x 9 inch pan. Bake at 375 for 5 minutes. Combine remaining ingredients, beat well. Scoop this mixture here and there over the cooked bottom layer then bake 5 more minutes. Lastly, spread the remaining reserved cup on top and bake 25-30 minutes more or until light golden brown. Cool and sliced into bars.
