BBQ Jackfruit Sandwiches

(serves 2)

1 can jackfruit - young, green jackfruit in water,
   rinsed and drained (in syrup, rinse well and
   soak in water 30 minutes, rinse again)
2/3 cup BBQ sauce of choice (try to use a not-
   so-sweet brand)
1 tsp each: smoked paprika, onion powder and
   chili powder
2 buns or pretzel rolls
1 cup coleslaw of choice (optional)

Preheat oven to 400 degrees. Place the jackfruit in a medium bowl and use 2 forks to separate the fruit into smaller shreds and pieces. Sprinkle with smoked paprika, onion & chili powder. Stir well. Add 1/3 cup BBQ sauce stir again. Place (flattened out) on a parchment lined baking sheet and bake for 20-25 minutes. (OR, cook on stovetop in a coated skillet for up to 35 minutes thinning out BBQ sauce as needed with a little water as it cooks.) Stir in remaining 1/3 cup BBQ sauce, stir well and serve on small buns, mini sandwiches, crackers, etc. Add coleslaw for added flavor and presentation – optional.
