Basil Lemon Pesto

1 15 oz can or box cannellini beans, rinsed and drained
1 cup packed fresh basil
½ cup walnuts
¼ cup nutritional yeast (nooch)
¼ cup lemon juice, or more to taste
Zest of 2 lemons
2 cloves of garlic
Salt and pepper, to taste
Follow your heart vegan parmesan as garnish (optional)

Directions: Using a food processor, drop in the garlic while the machine is running. Add beans, nooch, lemon juice and lemon zest. Process well before adding the basil, walnuts, salt and pepper. Process to desired consistency. Serve over pasta with fresh tomatoes or spread on bread or crackers.
