Avocado Dressing

I like this salad rather soupy with the dressing. The dressing is so good you can eat it like a soup too! Throw in a leftover baked potato or some beans to really fill you up with the good stuff!!

1/2 avocado
1/4-1/2 cup water (try 1/4 cup and add more as needed to reach desired consistency)
1 small cucumber, peeled and roughly cut
1/2-1 lemon juiced (add 1/2 of the juice, add more to taste)
1/2 carrot, washed, trimmed and roughly cut, optional
1 tomato, washed, trimmed and cut in half
2 green onions
Salt and pepper to taste or splash of Bragg’s liquid aminos
Red peppers, fresh herbs, etc. (optional)

Put the above ingredients into a blender or food processor and blend well. Place your choice of greens in a container with a lid. Pour desired amount of mixture over greens and put lid on container. Shake to blend.
