Apple Crisp
Recipe slightly altered from MinimalistBaker.com
serves 6

Base
8 medium apples - 4 granny smith and 4 honey crisp or other sweet variety - peeled and chopped
2/3 cup sugar of choice such as coconut sugar, date sugar, white sugar, etc
1/4 cup apple juice or cider
1 lemon - juiced
3 Tbsp cornstarch
1 1/2 tsp cinnamon
1 tsp ginger, powdered - or fresh, grated
1 pinch nutmeg

Topping
1 cup oats
1/2 cup almond meal
1/2 cup flour of choice
1/2 cup brown sugar
1/2 cup maple syrup
1/2 cup pecans or walnuts
1 tsp cinnamon
1/4 tsp salt

Preheat oven to 350. Get everything out and measured for this one and it will go very fast. Get out 2 medium bowls, 1 for base, 1 for topping. Peel and chop apples. Add remaining base ingredients, stir well and place into a 9 x 13 baking dish or an 8 x 8 baking dish. In bowl 2, combine topping ingredients well. Cover apples with topping ingredients. Bake 40 minutes covered. Remove cover and bake 20 more minutes until topping is golden brown. Let rest 30 minutes. Oven times will vary & depending on size of pan.
