5 Ingredient Pecan Praline Cookies

35 graham crackers
1 cup brown sugar
1 cup Earth Balance butter (they do come in sticks
  which is easier to measure than the tubs)
1/4 tsp cream of tartar (to prevent sugar‚ Äôs tendency to
    rebond and form crystals)
1 cup chopped pecans
1 tsp vanilla, optional 

Directions: Preheat oven to 325 degrees. Line a 10x15-inch sheet pan with aluminum foil or parchment paper. Cover the pan with a single layer of the crackers. In a saucepan heat the sugar, butter and cream of tartar until sugar is well dissolved.  (At least 5 minutes of stir time or more.) Add nuts, take off heat for 5-10 minutes and then pour mixture over crackers. Spread out so it will all melt and cover the crackers in the oven. Bake for 10 minutes. Remove from oven and re-adjust pecans onto crackers with a fork. Cool for about 5 minutes then remove from pan while still warm. Cool completely. Store in fridge for up to one month.
