Vegan Cream Cheese Frosting

Classic frosting for carrot cake

Ingredients:
8 oz non-dairy cream cheese - softened at room
   temperature while you make the cake
1/4 cup Earth Balance® buttery stick or
      spread, softened to room temperature
1 tsp vanilla
2 cups powdered sugar
1 Tbsp lemon juice

Directions:
In a food processor, combine all ingredients and blend well to smooth. Put back into the refrigerator for 30 minutes or so, if too runny to frost cake.
