Turkish Lentil Soup

Ingredients:
1 onion, roughly chopped
2 ribs celery, roughly chopped
2 large carrots, roughly chopped
2 medium potatoes
1 bag red lentils, rinsed
2 bouillon
2 Tbsp Earth Balance butter
2 tsp hot Hungarian paprika
2 tsp mint, dried

Directions: Saute the onion, celery, carrots in spoonfuls of water to soften, stirring often and adding more water as needed, about 10 minutes at medium-high heat. Add potatoes, lentils and bouillon plus enough water to cover all. Bring to a boil, then turn on low, cover and cook for 30 minutes. Check that lentils are soft. Remove soup contents from pan. Blend soup in batches in a blender. In empty pan, saute the paprika and mint in the butter for a few minutes at medium-low heat stirring constantly. Add blended soup back to pot. Salt and pepper to taste. GF, V
