Sherry's Pea Soup

Wow, this soup is easy, versatile and yummy!
2 cups split peas, dry
1 medium potato, washed and cut into chunks
1 medium onion, cut into chunks
3 carrots, sliced
2 stalks celery, sliced
1 tsp salt
1 tsp Italian seasoning blend (optional)

Throw all ingredients in to a crock pot. Fill with water up to 1 inch from top of crock. Turn on high and bring to a boil. Reduce to low and cook until peas are cooked through (usually a couple of hours depending on your crock pot). Once peas are cooked, use an immersion blender and blend until creamy or process batches in a blender. The potato is what thickens this soup, if you want a thicker soup, use more potatoes. Soup becomes more solid once chilled.
