Quinoa Spinach Black Bean Patties

1 cup dry quinoa
2 cups water
1 can organic black beans, rinsed and drained (or 1½ cups cooked beans)
5 oz chopped frozen spinach, thawed (use ½ a 10 oz pkg. squeeze dry if too wet)
3 medium organic carrots, rinsed well
1 cup bread crumbs of choice (about 2-3 slices of bread)
2 Tbsp Tahini
2 Tbsp flax seed, ground
1 tsp each salt & onion powder
½ tsp garlic powder

Directions: In a small pot add 2 cups water, bring to boil. Add quinoa, stir, lower heat, cover and cook for 15 minutes or until all liquid is absorbed. Remove from heat. In a food processor, use about 2 slices of bread of choice to make 1 cup bread crumbs, measure and set aside. Change to the grater blade on your processor & grate the carrots. Change back to the S blade, leave carrots inside, add beans and pulse to break up beans enough to aid in forming patties, being careful not to go too far. In a large mixing bowl, add the bean/carrot mixture along with rest of the ingredients. Combine well, adjust seasonings if desired and pack mixture in batches into a ¼ cups measuring cup. Form into patties, repeat until all patties are formed. Using a frypan, fry patties in batches on medium-high heat until browned on both sides. Serve or freeze.
