Oriental Ginger Dressing

Ingredients:
1 Tbsp fresh crushed garlic
2 Tbsp fresh ground ginger
2 Tbsp brown rice vinegar
2 Tbsp reduced sodium tamari
2 Tbsp sesame oil
1/4 cup veggie broth or water
1/2 cup cashews (soaked in water for an hour, rinsed and drained)
3/4 cup orange juice
1/2 cup apple juice concentrate

Directions: Combine garlic and vinegar for 10 minutes to take the edge off garlic, then add to a food processor or blender. Add remaining ingredients and blend well.
