Low Fat Granola

Yields approximately 3 cups
Ingredients:
4 cups rolled oats
3/4 cup apple, pineapple or orange juice
3/4 cup maple syrup
2 Tbsp vanilla
4 dates
1/2 cup slivered almonds
1/2 cup chopped walnuts
1/2 cup dried cranberries

Directions:
Place oats in a large bowl. Blend orange juice, maple syrup, vanilla and dates in a blender or food processor until dates are pureed. Pour over oats. Add almonds, walnuts, or your favorite nuts. Spread mixture evenly on a prepared baking sheet. Bake at 250°F for 2 1/2 hours, stirring once or twice. Oven times may vary, suddenly, the mixture will turn a light brown color. Remove from oven and cool completely. Add the cranberries. Store in an airtight container for up to 2 weeks. GLUTEN FREE, VEGAN
