Gazpacho

4 cups organic tomato juice or V8
1 clove garlic, minced
1 medium onion, diced
2 tomatoes, seeded and diced
1 green bell pepper, diced
1 cucumber, seeded and diced
2 Tbsp each: lemon juice, red wine vinegar and fresh basil, chopped
Pinch cumin
Salt and pepper to taste


Directions: Combine all ingredients. Will keep for one week plus in the refrigerator.
