• Eat Every Day Cheesy Sauce

    2 1/2 cups peeled & chopped potato, about 3 medium potatoes of any variety
    4-5 medium carrots, peeled & chopped
    1/2 cup nutritional yeast
    1/3 (plus) cup reserved cooking water or veggie broth
    1 Tbsp lemon juice
    1 1/2 tsp salt
    1 tsp onion powder
    1/2 tsp garlic powder
    1 Tbsp vine plum vinegar (optional)

    Cook the carrots and potatoes over medium-high heat until very tender (starting with the carrots first) about 25 minutes. Reserve hot water. Scoop veggies out of the water and place into a blender or food processor. Add remaining ingredients, adding cooking water as needed to reach desired consistency. Store in fridge and serve with steamed veggies, grains, chips etc. Combine sauce with salsa to make a chessy Mexican dip or try adding to any soup. There are lots of ways to enjoy it.
