Delicata Breakfast Bowl

serves 2

1 delicata squash
2 apples, any variety; peeled (if desired),
   seeded and chopped
1 cup non-dairy plant milk, divided
2 Tbsp pecans or walnuts, chopped
2 Tbsp drizzle of pure maple syrup
1/4 tsp sprinkle of cinnamon (to your liking)

Prick squash with knife and bake in a 375 degree oven for about 40 minutes or until browning occcurs. When cooled, cut in half lengthwise and scrape seeds out. Using a spoon, scoop the flesh into serving bowls, combine with the other ingredients and enjoy.
