Creamy Cashew Dressing

Ingredients:
1 cup cashews
1/2 pitted medjool date
2” piece of fresh ginger
1 large garlic clove
1 tsp salt
2-4 Tbsp lemon juice
1/2 - 1 cup fresh water, plus extra for soaking cashews & date


Directions: Soak the cashews and the date in water for 8 hours or overnight. Drain. Add all ingredients to a high-powered blender and blend well. Adjust seasonings to taste. Serve on salads, kale or over veggies, etc.
