Cranberry Apple Crisp

 

6 apples
1-½ cups cranberries
1 Tbsp whole-wheat flour
¾ cup chopped dates, optional
½ nutmeg and apple pie seasoning, optional

TOPPING:
1 cup rolled oats
¼ cup whole-wheat flour
3 Tbsp Earth Balance, melted; or oil
2 Tbsp cinnamon
½ cup brown sugar
1 Tbsp water
½ tsp salt
¼ cup walnuts or pecans, optional

 

Preheat oven to 375 degrees. Lightly oil a 9 x 13 baking dish. In a medium bowl, mix the apples, cranberries, flour, dates (optional), and nutmeg. Spread mixture into baking dish. In another medium bowl, combine the topping ingredients: should be crumbly and moist (not wet). Spread topping over fruit mixture and bake for 45 minutes. Topping should be browned and apples should be soft when pierced. Serve over vanilla rice dream.
