Chick Pea Smash Salad

2 cans of chick peas, rinsed and drained
   (Reserve the liquid for the Oil-free
   Balsamic Vinaigrette recipe)
4 stalks of celery, washed, trimmed
   & diced
4 green onions, diced, ends cut off
2 carrots, washed, trimmed & diced
1 red pepper, diced (optional)
2-4 Tbsp pickle relish, dill or sweet
2-3 Tbsp vegenaise or nayonaise
1-2 tsp yellow mustard
      (Fresh herbs such as cilantro,
      parsley or dill make a nice addition
      too)
 
Pulse chick peas in a food processor or mash chick peas by hand with a fork. Pour the chick peas into a bowl with the remaining ingredients and stir all together or pulse all veggies in the processor with the chick peas. Enjoy on crackers or whole grain bread. Also good in hollowed out tomatoes or lettuce leaves.
