Cacao Frosting

1 cup + 8 medjool dates, soaked overnight in 1 3/4 cups water (reserve soaking water)
¾ cup water (reserved from soaking the dates)
2 Tbsp cashews
¾ cup cacao (or carob) powder
2 tsp vanilla

Directions: Combine ¾ cup water and cashews in a Vitamix or other powerful blender until creamy. Add dates, cacao powder and vanilla and blend until smooth. You may need to add a little more water until the desired consistency is reached.
