1 8 lb (+/-) seedless watermelon, cut into chunks
1 ½-2 cups vegan feta* or store bought cheese, crumbled (*see recipe below)
1 cup fresh mint or basil, coarsely chopped
1 red onion, thinly sliced in half moons
2 Tbsp balsamic vinegar to taste
½ tsp fresh black pepper
Directions: Toss all ingredients together in a large bowl and serve chilled.
