Baked Oatmeal with Bananas and Blueberries

serves 4-6
Feeding a few extra for breakfast?
This is a good choice!

1 cup rolled oats
1 cup non-dairy milk of choice
3 ripe bananas, sliced
1-1 1/2 cups blueberries, fresh or frozen
1/4 cup pure maple syrup plus more for serving
1/4 cup chopped nuts of choice (optional)
1 Tbsp vanilla extract
2 tsp each cinnamon, baking powder & flax,
   hemp or chia seed

Preheat oven to 375 degrees. Lightly spray a 9x13
baking pan with non-stick spray. Place sliced bananas on the pan (they don’t need to cover the bottom of pan). Mix the oats with the other dry ingredients in a bowl and sprinkle over bananas. Stir the vanilla into the milk and pour over mixture.  Top with berries and nuts, if using. Cover tightly with foil and bake for 40 minutes.
