• Ambrosia

    2 oranges, peeled and chopped                        
    2 cups pineapple chunks
    1 banana, sliced                                                    
    1/4 cup shredded dried coconut
    2-4 Tbsp dried cranberries or cherries
    1-2 Tbsp orange juice concentrate, thawed                
    1/2 tsp almond extract

    In a small dish, add almond extract to orange juice concentrate, set aside. Combine remaining ingredients in a mixing bowl. Add the banana slices just before serving. Stored in a covered container in the refrigerator, leftover Ambrosia without the bananas will keep for up to 5 days.
